Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 1 cup all-purpose flour
- 1/2 cup water
- 1/4 tsp salt
- 1/4 tsp baking powder
- Vegetable oil for frying
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup sliced avocado
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- Lime wedges for garnish
Instructions:
In a bowl, combine the shrimp and Cajun seasoning
Toss to coat evenly and set aside for 15 minutes
In a separate bowl, whisk together the flour, water, salt, and baking powder to make the taco shell dough
Divide the dough into 8 equal portions and roll each portion into a ball
Flatten each dough ball into a thin circle, about 6 inches in diameter
Heat vegetable oil in a deep pan to 350F 175C
Fry the dough circles one at a time until they are golden brown and crispy
Drain on paper towels and set aside
In a separate pan, heat some oil over medium-high heat
Add the Cajun-seasoned shrimp and cook for 2-3 minutes per side, until they turn pink and are cooked through
To assemble the tacos, place a fried taco shell on a plate
Add a layer of shredded lettuce, followed by the Cajun shrimp
Top with diced tomatoes, red onion, avocado slices, and a dollop of sour cream
Garnish with chopped cilantro and serve with lime wedges on the side
